Spicy Vegan Sambal Avocado Toast (5-Minute Recipe)

Ingredients
- 2 slices sourdough or wholegrain bread
- 1 ripe avocado
- 1–2 tbsp Not Your Mama's Sambal
- Squeeze of lime juice
- Flaky sea salt
- Optional: soft-boiled egg or crispy pan-fried tofu, for extra protein
- Optional: toasted sesame seeds or crushed peanuts, for crunch
- Fresh coriander, to finish
Instructions
- Toast the bread. Toast until properly golden and crisp — a sturdy base matters here, since it's holding up avocado and a fairly loose sambal.
- Mash the avocado. In a small bowl, mash the avocado with a squeeze of lime juice and a pinch of salt until mostly smooth with a few chunky bits left for texture.
- Spread generously. Load the mashed avocado onto the toast in a thick, even layer — don't skimp, it's doing half the flavour work here.
