  • Optional: fried shallots for topping

Instructions

  1. Prep the noodles. Drain the konjac noodles and rinse thoroughly under cold water — this removes the natural odour they're packed in. Pat dry with a paper towel.
  2. Dry-fry the noodles. Heat a non-stick pan over medium-high with no oil, and toss the noodles for 1–2 minutes. This step matters more than it seems — it drives off excess moisture and gives the noodles a firmer, more satisfying bite instead of a rubbery one.
  3. Add oil and garlic. Push the noodles to one side, add the oil and garlic to the empty space, and let it sizzle for 20–30 seconds until fragrant.
  4. Heat the sambal sotong. Warm your pouch of Sambal Sotong according to pack instructions (about a minute in the microwave, or a quick simmer in a pan), then pour it directly over the noodles in the pan. Toss everything together for a minute so the noodles are fully coated.
  5. Plate and finish. Transfer to a bowl, top with bean sprouts or cucumber for crunch, scatter over coriander or spring onion, and finish with a squeeze of lime. Fried shallots on top if you're feeling extra.
