5-Minute Spicy Konjac Noodle Bowl with Vegan Sambal Sotong

Ingredients
- 1 pack konjac noodles (shirataki), drained and rinsed
- 1 pouch Not Your Mama's Sambal Sotong
- 1 tsp neutral oil (sesame or vegetable)
- 1 clove garlic, thinly sliced (optional, for extra bite)
- Handful of bean sprouts or sliced cucumber, for crunch
- Fresh coriander or spring onion, to garnish
- Lime wedge, to serve
- Optional: fried shallots for topping
Instructions
- Prep the noodles. Drain the konjac noodles and rinse thoroughly under cold water — this removes the natural odour they're packed in. Pat dry with a paper towel.
- Dry-fry the noodles. Heat a non-stick pan over medium-high with no oil, and toss the noodles for 1–2 minutes. This step matters more than it seems — it drives off excess moisture and gives the noodles a firmer, more satisfying bite instead of a rubbery one.
- Add oil and garlic. Push the noodles to one side, add the oil and garlic to the empty space, and let it sizzle for 20–30 seconds until fragrant.
- Heat the sambal sotong. Warm your pouch of Sambal Sotong according to pack instructions (about a minute in the microwave, or a quick simmer in a pan), then pour it directly over the noodles in the pan. Toss everything together for a minute so the noodles are fully coated.
- Plate and finish. Transfer to a bowl, top with bean sprouts or cucumber for crunch, scatter over coriander or spring onion, and finish with a squeeze of lime. Fried shallots on top if you're feeling extra.
Tips for the Best Bowl
- Don't skip the dry-fry step — it's the single biggest factor in whether your konjac noodles taste "meh" or genuinely good.
- If you like it extra spicy, add a few slices of fresh bird's eye chilli when you toss in the garlic.
- No konjac noodles on hand? This works just as well over steamed rice or regular rice noodles — the sambal sotong is the star either way.
