What Is Lion's Mane? The Mushroom Behind Our Rendang

Ever wondered how a plant-based rendang can taste so rich and satisfying? A big part of the answer is a remarkable mushroom called Lion’s Mane.

What is Lion’s Mane?

Lion’s Mane (Hericium erinaceus, sometimes called Bearhead or Monkey Head mushroom) is a white, shaggy mushroom that grows in cascading tendrils. In the kitchen, it has a naturally tender, shreddable texture that pulls apart much like cooked meat — which is exactly why it stars in our Not Your Makcik’s Rendang and Ayam Masak Merah.

Why it tastes so good

Beyond texture, Lion’s Mane is mild and absorbent, soaking up the lemongrass, galangal, chilli and coconut in our spice blends. The result is a bite that’s juicy, savoury and convincingly “meaty” without a gram of meat.

A functional favourite

Lion’s Mane isn’t just delicious — it’s one of the more researched “functional” mushrooms out there, and long valued in traditional East Asian wellness. Here’s what that reputation is actually built on:

Cognitive support. Lion’s Mane contains compounds called hericenones and erinacines, which early research suggests may support nerve growth factor (NGF) production in the brain. Human trials are still relatively small, but several have shown improvements in mild cognitive symptoms with regular consumption — which is where its “brain mushroom” reputation comes from.

Mood and nervous system support. Some studies point to a mild anti-inflammatory effect on the nervous system, which researchers are exploring in relation to mood and stress resilience.

Gut health. Like most mushrooms, Lion’s Mane contains beta-glucans and other fibres that support a healthy gut microbiome.

Plant protein and fibre. Beyond the “brain food” headlines, it’s a genuinely solid source of plant protein and dietary fibre, low in fat, with none of the cholesterol or saturated fat of the meat it’s replacing.

Worth noting: most of the standout clinical research on cognition uses concentrated extracts, not the mushroom eaten as food. Eating it in meals is still a great way to get fibre, protein and beta-glucans as part of a balanced diet — just don’t expect the same effect as a high-dose supplement.
