5-Minute Vegan Nasi Lemak with Vegecore Sambal

Nasi lemak is the breakfast of champions — and with Vegecore, the plant-based version takes about five minutes. The shortcut is our Not Your Apak’s Sambal Nasi Lemak: real-chilli sambal, no belacan, all the fragrance.

Serves 2 · 5 minutes

Ingredients

  • 1 jar Not Your Apak’s Sambal Nasi Lemak
  • 2 cups cooked coconut rice (or plain rice in a pinch)
  • A handful of roasted peanuts
  • Sliced cucumber
  • Optional: 1 pouch Not Your Pakcik’s Dendeng, warmed, for protein
  • Optional: a wedge of lime

Method

  1. Warm your rice if it’s been in the fridge (30–60 seconds in the microwave).
  2. If you’re adding dendeng, heat the pouch for 1 minute, then slice.
  3. Plate the rice and spoon over a generous helping of sambal nasi lemak.
  4. Add peanuts, cucumber, the dendeng and a squeeze of lime.

Tips

The sambal keeps in the fridge after opening — if the oil firms up, leave it at room temperature for 5–10 minutes and stir. Want more heat? Add a spoon of Not Your Mama’s All-Purpose Sambal.
