5-Minute Vegan Nasi Lemak with Vegecore Sambal

Ingredients
- 1 jar Not Your Apak’s Sambal Nasi Lemak
- 2 cups cooked coconut rice (or plain rice in a pinch)
- A handful of roasted peanuts
- Sliced cucumber
- Optional: 1 pouch Not Your Pakcik’s Dendeng, warmed, for protein
- Optional: a wedge of lime
Method
- Warm your rice if it’s been in the fridge (30–60 seconds in the microwave).
- If you’re adding dendeng, heat the pouch for 1 minute, then slice.
- Plate the rice and spoon over a generous helping of sambal nasi lemak.
- Add peanuts, cucumber, the dendeng and a squeeze of lime.
Tips
The sambal keeps in the fridge after opening — if the oil firms up, leave it at room temperature for 5–10 minutes and stir. Want more heat? Add a spoon of Not Your Mama’s All-Purpose Sambal.
